Open Face Sausage and Egg Scramble

Ingredients:
1 Large Egg
2 Large Egg Whites
2 Jennie-O– Turkey Lean Sausages
1c Fresh Spinach Leaves
1 Slice Whole Wheat Bread

Toast whole wheat bread
Cut the sausages up in smaller pieces
Add the egg and egg whites to a small mixing bowl,
Add the chopped sausage and spinach leaves to the egg mixture  and mix well . Pour egg mixture into a frying pan and scramble over medium heat.  Add salt and pepper to taste.
Enjoy as an open faced sandwich
